I really like Scotland lvl6 for a “well-rounded” challenge:

We put Scotland on the shelf after one try. Maybe I will get it back in rotation after this advice.

The worst - and best - part of Scotland is that escalation that adds towns to the board with the most coastal buildings. It feels so unfair at first, because it’s punishing to the player who is already struggling to keep things under control. However, what I found was that it encouraged us to help each other out more than we normally do. And any game that gets players jumping across the board to help out is a fun game for me!

We got good at playing "Toddler mode" (nearly parallels play ). However when we started getting to higher adversaries, there was so much more synergy. The best is when early game you can help the other player with money, speed or control. Best games by far. (Worst games? When we are so far ahead we are bickering about duplicating lands)
Cheers,
G
