I am very much not a great Carcassonne player, but I believe that much of the strategy in this game comes from knowing what tiles are yet to come out, which informs as to which moves are still good, and which plan must now be abandoned. Taking tiles out at the start of the game will likely mess this up.
If you can be patient, I would suggest instead spending longer with the base game, such that playing it becomes second nature. Then add just one expansion at a time, getting used to each before adding the next. That should help keep the game times reasonable, at least.
